Peanut Butter Spider Cookies

3FF77267-ADF8-4812-99FD-3B586FA78556My favorite Christmas cookies (peanut butter blossoms) just morphed into my favorite Halloween cookies!

Ingredients:

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1/2 cup butter, softened
1 egg
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
additional granulated sugar
about 36 Hershey’s Kisses or Brach’s chocolate stars
candy eyes
1 cup chocolate chips

Directions:

  1. Preheat the oven to 375°F. Unwrap chocolates. Pop a few in your mouth when nobody is looking. In a large bowl (like a KitchenAid, for example), beat 1/2 cup granulated sugar, brown sugar, peanut butter, butter and egg on medium speed, or mix with a spoon, until well blended. Stir in flour, baking soda and baking powder until dough forms or until you’ve successfully covered your counter with white powder from your over-aggressive mixing technique.
  2. Shape dough into 1-inch balls. If you’re doing this with children, you’ll want to double check the size of their cookies, lest you have cookies the size of your head. Roll the balls in granulated sugar. On ungreased cookie sheets, place the dough about 2 inches apart.
  3. Bake 8 to 10 minutes or until edges are light golden brown. Immediately press 1 chocolate candy into the center of each cookie, followed by 2 candy eyes on the melty chocolates. Ignore your kids when they tell you that spiders actually have 8 eyes. Melt the chocolate chips and put them in a pastry bag. Squeeze out 8 legs from each chocolate star. Remove whatever cookies you didn’t devour from the cookie sheets and transfer to a cooling rack.
